Food Service Director-Penney Retirement Community

Position Title: Food Service Director

Reports To: President/CEO

General summary: Penney Retirement Community is a Continuing Care Retirement Community (CCRC). This position oversees the daily operation of an independent dining room for 400 independent living residents, three assisted living homes including a memory care home. Experience working with older adults with various diet restrictions is a key element of the job. The director must demonstrate overall good stewardship of resources.

Position Responsibilities:

· Establishes departmental regulations and procedures in conformance with administrative policies.

· Develops standards for organization and supervision of dietary services.

· Maintains quality dietary services within the prescribed budget. Director will be responsible for establishing and monitoring all areas of budget.

· Determines quality and quantity of food required; plans menus and controls food costs; may be scheduled to prepare meals.

· Oversees the food preparation and cooking, to ensure meals are prepared per facility procedures.

· Makes frequent inspections of all work, storage, and serving areas to determine that regulations governing food safety and sanitation are followed.

· Prepares cleaning schedule, production worksheet and staff schedules.

· Maintains inventory of food and nonfood items.

· Selects, orients, and trains new employees in department; effectively delegates authority to dining services staff (22 employees) to ensure effective flow of materials and services.

· Provides nutrition education and counseling for residents; presents dining services education program to dining services and other staff as needed.

· Ensures safe work procedures are developed and followed, to include those relating to employee injuries, prevention, and infection control.

· Ensures a continuous quality improvement program is in place and appropriate follow-up occurs.

* Willing to work a flexible schedule and some holidays when needed in order to accomplish all major responsibilities and promote teamwork in the department. 

Communication:

· Understands and adheres to department policy and procedures.

· Conducts himself/herself in a professional manner at all times

· Resolves conflicts respectfully and in a timely manner, asks for assistance as needed.

· Participates actively in department team and all staff meetings.

· Ability to communicate effectively verbally and in writing.

Education and Experience: 

*5+ years' experience in the hospitality industry.

*Minimum 3+ years in a management role with primary financial accountability.

*Proven ability to adhere to budgets and meet revenue targets.

*Must have exceptional communication, organizational, leadership and problem- solving skills.

*Must demonstrate professional conduct and presentation at all times.

Certifications, Licenses, and Other Special Requirements: Current SERV Safe Certification required. Obtain/hold any local, state and/or county required food handling/sanitation licenses and/or certificates.

Management/Decision Making: Applies existing guidelines and procedures to make varied decisions within a department. Uses sound judgment and experience to solve moderately complex problems based on precedent, example, reasonableness or a combination of these.

Knowledge and Skills: Possesses exceptional customer service skills to foster a sound relationship with the residents and employees. Attention to detail, to be responsible for the dining experience of the residents and guests as to the presentation of the meals being served and the service provided.
